YG: Hospitality Cookery/FOH (Level 2)

With this programme you will gain the skills to work in a cafe or restaurant with the opportunity

to complete a Level 2 New Zealand Certificate in Hospitality as well as NCEA Levels 1 and 2.

  • > Course Outline

    This hospitality and cookery course will introduce you to the basic skills and the qualifications 
    to start your career in the hospitality industry. You will create opportunities to work in restaurants, 
    cafes and bars, hotels, or on cruise ships.

      
    The course covers:
    - Specialist coffee making skills and operation of barista equipment
    - Café food preparation and presentation
    - Menu creation, food safety and hygiene
    - Food  beverage service, table service & customer service
    - Cookery methods including baking, roasting, grilling, frying & steaming; 
    - Food portioning & presentation
    - Using and maintaining knives
    - Safe food handling & contamination hazards

  • > Course Fees and Eligibility: FREE for 16-19 year olds *

    To participate in this course and qualify for free training under the Youth Guarantee initiative,
    students must:

    - be 16-19 years of age at the start of the Youth Guarantee programme;
    - be a New Zealand citizen or have New Zealand permanent residency;
    - be prepared to study full-time for 1 year in a level 1-3 programme;
    - not be enrolled in school & a Youth Guarantee programme simultaneously;
